Appearance:
Deep garnet with a ruby rim—brilliant clarity and moderate staining on the glass.
Nose:
Aromatic and bold. Opens with black cherry, dried cranberry, and ripe plum, followed by layers of cedar, cacao, and a hint of cracked pepper. As it opens, notes of dried herbs and a faint earthy minerality emerge—evocative of New Mexico’s rugged landscape.
Palate:
Medium-bodied with fine, dusty tannins and balanced acidity. Flavors of black raspberry, mulberry, and red currant dominate, framed by subtle oak tones of vanilla and toasted spice. There's a savory quality that adds depth and complexity.
Texture & Structure:
Silky yet structured, the grape's Cabernet Sauvignon lineage gives it backbone, while the Carignan influence softens the edges, making it both food-friendly and enjoyable on its own.
Finish:
Long and satisfying, with lingering red fruit, spice, and a touch of minerality—a signature of high-elevation New Mexico vineyards.
Ruby Cabernet is relatively rare and underappreciated, but in New Mexico’s sun-drenched, high-altitude vineyards, it can produce beautifully concentrated and characterful wines.
