Our Techniques
Sheehan Winery wines utilize a mixture of traditional and modern techniques to make wines of incredible depth and complexity. We pick the grapes at their optimal physiological ripeness and de-stem directly into temperature controlled stainless steel tanks. We are careful to treat each small batch with the upmost care to ensure that it expresses its true New Mexico terroir. After primary fermentation we transfer our young wines to French Oak barrels to age and soften. Depending on the varietal, our wines will age from one to two years in the oak barrels. The aging wine is blended for balance and flavor.
